Spiced Nuts
~makes 2 cups~

2 cups raw unsalted nuts, such as pecans, almonds, or walnuts
2 TBSP butter, unsalted (if using salted butter, omit 1 tsp from recipe)
2 TBSP  Spicegrrrl® Nice
opt: salt and a pinch of cayenne

1. In dry skillet on medium heat, add nuts and cook, stirring frequently, until they begin to toast, about 1 -2 minutes.
2. Add butter and cook another minute or so, until all nuts are coated and toasty.
3. Sprinkle on Nice ®, salt and cayenne (if using). Stir well to coat evenly and continue cooking until sugar has melted and glaze forms, about 4-5 minutes. Lower heat as necessary; taking care not to let sugar burn.
4. Pour nuts out onto baking sheet lined with foil or silpat, and spread nuts out so they don’t stick together as they cool. Let stand at least 15 minutes before transferring to serving dish or storage container.

SNICKERDOODLES
~makes 2 dozen large cookies~

2 1/2 cups flour, all purpose
2 tsp cream of tartar
1 tsp baking soda
1 cup butter, softened (add just a pinch of salt, if using unsalted butter)
1 1/2 cup sugar
2 large eggs
4 Tbsp NICE ®

Preheat oven to 400ºF and line cookie sheets with parchment paper.
Sift together flour, cream of tartar, and baking soda in a large bowl.
In another large bowl, cream butter with sugar until light and fluffy, about 4-5 minutes. Beat in eggs another minute. Using a heavy spoon, stir in flour mixture gradually until well combined.
Using a cookie scoop or soup spoon, scoop out balls of dough and roll in your hand to make them about 1 1/2 inch around, then roll thoroughly in NICE.
Place balls on prepared cookie sheets, about 2 - 3 inches apart and bake for 8–9 minutes, until lightly golden around the edges. Let cool a few minutes before removing to cooling racks.
